Southwest Pork Loin

  • 2 T Olive oil
  • 2 T lime juice
  • 1 pork loin roast, boneless, 3-4 pounds
  • 1 t chili powder
  • 1/2 t chipotle chili powder
  • 1 t ground cumin
  • 1/2 dried oregano
  • 1/4 t black pepper



Step 1

Combine olive oil and lime juice. Rinse roast and pat dry. Put in shallow bowl with the oil and juice mixture; turn to coat all sides. Combine remaining seasonings and rub all over the roast. Cover and refrigerate 2-4 hours.

Place in a lightly oiled roasting pan and 325 degrees until 170 degrees. Serve with salsa if desired.
