Ingredients

  • 1 small onion
  • 1/2 large tomato, peeled and seeded
  • 1/2 cucumber
  • 1/2 green pepper
  • 1 large celery stalk
  • 2 t finely chopped parsley
  • 1 t chopped chives
  • 1 small clove garlic, minced
  • 2 C tomato/vegetable juice
  • 2 - 3 T red wine vinegar
  • 2 T olive oil
  • 1 T lemon juice
  • 1 t sugar
  • 1 t salt
  • 1/4 t white pepper
  • 1/2 t Worcestershire sauce
  • 1/8 t Tabasco

Step 1

Chop all veggies in a food processor. Combine with remaining ingredients and refrigerate until very cold.

Garnish with chopped green onion, croutons, bacon bits or chopped avocado
