Curried BLT Sandwiches

Ingredients

  • Curry Spread:
  • 8 slices oatmeal bread, lightly toasted
  • 12 slices bacon, cooked and crumbled
  • 1/4 c. raisins
  • 1/4 c. cashew nuts, coarsely chopped
  • 2 large tomatoes, sliced
  • lettuce leaves
  • 2 Tb. mayonnaise or salad dressing
  • 2 Tb. sour cream
  • 1 Tb. chutney
  • 1 tsp. curry powder
  • 1/2 tsp. grated orange rind
  • pinch ground ginger
  • pinch ground cumin

Preparation

Step 1

Coat one side of each bread slice with Curry Spread. Sprinkle bacon, raisins, and nuts evenly on 4 slices; top each with tomato slices and a lettuce leaf. Cover with remaining 4 bread slices.

For Curry Spread: Combine all ingredients; cover and chill. Yield: 1/3 cup.
