Ingredients
- Use this recipe as a template, and customize this sandwich according to your preferences. Instead of using watercress, try adding baby lettuce greens or thinly sliced poached breast.
- 6 Tb. butter, softened
- 3 Tb. chopped fresh mint
- 1/4 tsp. salt
- 1 serrano chile, seeded and finely chopped
- 12 (1oz.) slices sandwich bread
- 1 1/2 c. sliced seeded peeled cucumber
- 1 Tb. fresh lime juice
- 1 c. trimmed fresh watercress
Preparation
Step 1
1. Combine first 4 ingredients, stirring until well blended.
2. Trim crusts from bread; discard crusts. Spread each bread slice with about 1 1/2 tsp. butter mixture. Place cucumbers in a small bowl, and drizzle with lime juice; toss to coat. Arrange cucumber slices and watercress in an even layer over buttered sides of 6 bread slices; top with remaining bread slices, buttered side down. cut sandwiches diagonally into quarters.
