Cranberry Pecan Salad

  • 2 radicchio bunches, torn
  • 1 red leaf lettuce bunch, torn
  • 1 endive bunch, torn
  • 3 pears, thinly slice
  • 1/2 c. sweetened dried cranberries
  • 1/4 c. chopped pecans, toasted
  • 1/4 c. Gorgonzola cheese
  • 1/3 c. pear juice
  • 1/4 c. oil
  • 2 Tb. vinegar
  • 2 Tb. lemon juice
  • 1 tsp. red onion, minced
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

Preparation

Step 1

In a large mixing bowl, combine salad greens. Toss greens with pear, cranberries, pecans and cheese; set aside. Before serving, whisk together pear juice, oil, vinegar, lemon juice, red onion, salt and pepper; toss with salad.
