Cornbread Casserole (Crockpot)

Ingredients

  • 1 (16 ounce) can creamed corn
  • 3/4 cup yellow cornmeal
  • 1/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 cup milk
  • 2 eggs, beaten
  • 2/3 cup taco sauce
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 (4 ounce) can diced green chilies
  • 1 pound ground beef chuck or leaner, browned and drained

Preparation

Step 1

Combine creamed corn, cornmeal, flour, baking soda, salt, oil, milk, eggs and taco sauce

Pour half of this mixture into a Crock Pot cooker

Place cheese, onion, garlic, green chilies and browned ground beef over cornbread layer, then top with remaining cornbread mixture

Cover and cook on low for about 6 to 7 hours
