Homemade Banana Cream Pie

Ingredients

  • Homemade Pie Crust
  • 2 cups Flour
  • 1 1/2 tsp. Salt
  • 1/2 cup Canola Oil
  • 4 1/2 T. Cold Water
  • Homemade Vanilla Pudding
  • 2/3 cup White Sugar
  • 1/4 cup Cornstarch
  • 1/2 tsp Salt
  • 3 cups Milk
  • 4 Egg Yolks, beaten
  • 2 T. Butter
  • 1 T. Vanilla
  • 2 Large Bananas, sliced
  • Homemade Whipped Cream
  • 2 pints of Heavy Whipping Cream
  • 3/4 cup Sugar

Homemade Pie Crust
Combine flour and salt together. Then add the canola oil and water. Stir lightly with a fork. Form into one big ball. Divide into two even balls. Take two pieces of wax paper, put one ball in between the two papers. Roll out the ball with a rolling pin until the size of the pie plate. Peel off top wax paper. Place bottom half onto pie plate and pull back the wax paper once it's in. Make sure it's fit and snug inside with your fingers. Poke a very small hole in the bottom of the crust so there's a place for steam to escape or else it will bubble up like a big tent. Bake in a 350 oven for 10-20 minutes. Keep your eye on it and it's done once it's golden. Cool.
(You won't need the other 'ball' of dough for this recipe, it's used to top fruit pies. Wrap it in the piece of wax paper, put into a freezer bag, and freeze for another time!)

Homemade Vanilla Pudding
In a large saucepan or double boiler combine sugar, cornstarch and salt. Mix well, then stir in milk and egg yolks. Whisk until all ingredients are thoroughly combined. Cook over medium-high heat, whisking constantly, until mixture comes to a boil, producing big boiling bubbles that 'pop' at the top. Once it has started to boil, continue to cook and whisk until it is very thick and reached it's desired consistency. Remove from heat and stir in butter and 1 tablespoon vanilla.
Take your cooled pie crust and line the bottom with sliced bananas, once pudding mixture is semi cooled, spoon half of the mixture on top of sliced bananas, then put another layer of sliced bananas in the middle of the pie, then top with the rest of the pudding mixture. Set out to continue cooling. Once cooled put on whipped cream.

Homemade Whipped Cream
Pour both pints into the mixer, turn on medium-high speed, and let it whip! After about a minute or so it will start to thicken, start pouring in the sugar and continue to whip until desired thickness of whipped cream. Spoon on several glops on top of the pie and spread even. Garnish with banana slices if desired. Place pie in the refrigerator.
