Holiday Water Chestnuts Wrapped in Bacon*

  • 1/2 pound bacon
  • 2 3oz. cans whole water chestnuts
  • 1 jar apricot preserves
  • 1 cup brown sugar
  • 1/2 cup apple cider vinegar

Preparation

Step 1

Cut bacon slices in half. Wrap bacon slice around each water chestnut and secure with a toothpick. Deep fry until bacon is crisp and brown. (why not broil)

In a sauce pan melt together the preserves, brown sugar and vinegar. Pour over water chestnuts, or serve as a dipping sauce.
