Ingredients
- 1 pound medium sized shrimp
- 1 tablespoon olive oil
- 1 large mango or 2 cups cubed
- 1 large bell pepper, cubed
- 3 green onions, sliced medium thin
- 2 avocados, peeled and cubed
- 6 large mint leaves, cut into ribbons
- 1 cup E&V Key Lime Tangerine Chili Marinade & Dressing
Preparation
Step 1
In a large skillet, heat olive oil over medium heat. Place shrimp in skillet and sprinkle with a little salt. Cook until done, about 1 minute per side.
Remove from skillet and let cool.
Toss all ingredients together and serve over a bed of quinoa, rice or salad greens.
Dress with extra Key Lime Tangerine Chili Dressing as desired. Serves 6
