Ingredients

  • 3 Tbsp butter
  • 1 medium onion
  • 1 1/2 lbs ground beef
  • 3 cups canned tomatoes (preferably Italian plum tomatoes in puree sauce)
  • 3 2 consommé and 2 cans water
  • 4 medium carrots
  • 1 bay leaf
  • 10 peppercorns
  • Celery tops
  • Parsley
  • 1/2 tsp thyme
  • Salt

Preparation

Step 1

Melt butter, cook onion until limp. Brown hamburger. Pour in tomatoes, consomme and water. Add chopped vegetables and seasonings. Cover and cook over low heat 45 minutes. Uncover and cook another hour. Green beans and corn can be added.
