Ingredients
- 8 boneless chicken breast halves (or cutlets)
- 8 thin slices of deli ham
- 4 slices of provolone cheese, 1/2ved
- 2/3 cup seasoned bread crumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup minced fresh parsley
- 1/2 cup milk
- cooking spray
Preparation
Step 1
Flatten the chicken to 1/4 in thickness. Place a slice of provolone cheese and ham on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick
In a shallow bowl, combine the crumbs, Parmesan, and parsley. Pour milk into another bowl. Dip each chicken roll in milk, then roll in crumb mixture.
Individually wrap 4 of the chicken roll-ups in plastic or foil and place in a large freezer bag. Freeze up to 2 months. Place the remaining roll-ups on a greased baking sheet. Spritz chicken with cooking spray. Bake uncovered at 425 for 25 min, or till no longer pink.
TO USE FROZEN CHICKEN:
Completely thaw in refrigerator. unwrap rolls and place on greased cookie sheet. Spritz with cooking spray. Bake uncovered, at 425 for 30 min.
