Carrots Marsala

A simple side dish for Gestational Diabetic and it is a nice, flavorful way of serving carrots.

Ingredients
- 1 lb carrot, peeled, diagonally sliced
- 1/4 cup marsala wine
- 1/4 cup water
- 1 tablespoon olive oil
- fresh ground black pepper, to taste
- 1 tablespoon fresh parsley, chopped
Preparation
Step 1
1.In a large saucepan, combine carrots, wine, water, oil, and pepper.
2.Bring to a boil, cover, reduce the heat, and simmer for 10 minutes, basting occasionally.
3.Transfer to a serving dish, spoon any juices on top, and sprinkle with parsley.
