Ingredients
- 1 c. long-grain rice
- 1 1/4 c. fat-free chicken broth
- 1 tsp. salt
- 2 tsp. canola oil
- 1/2 c. light coconut milk
- 1/2 stalk lemongrass, smashed
Preparation
Step 1
Combine rice, broth, salt and canola oil in a medium saucepan over high heat. Bring to a boil. Reduce heat, and add coconut milk and lemongrass. Cover and simmer 15 minutes or until liquid is absorbed. Let stand 10 minutes; fluff with a fork.
