Ingredients
- PURÉE:
- 1 bunch fresh cilantro Minced zest and juice of 1 large lime
- 1 Tbsp. chopped fresh garlic
- 1 Tbsp. olive oil
- 1 Fresno chile or jalapeño, seeded and chopped
- COOK:
- 1 cup dry converted long-grain rice
- 2 1⁄4 cups water
Preparation
Step 1
Purée cilantro, zest, lime juice, garlic, oil, and chile in a food processor.
Cook rice according to package directions with water until liquid is absorbed, about 20 minutes. Let rice stand 5 minutes, then fluff with a fork.
Stir cilantro mixture into rice.
