Ingredients
- 1 (8-12 oz) package rice sticks/noddles
- 1 tsp canola oil
- 1 cup onion, chopped
- 2 garlic cloves, minced
- 1 (8 oz) package mushrooms, pre-sliced
- 2 cups cooked chicken breast, cubed (or cubed tofu)
- 1 cup carrot, matchstick-cut
- 1 cup frozen peas
- 1 (9 oz) package frozen green beans, french-cut
- 1 T sesame seeds
- 2 T soy sauce
- 1 T sesame oil
- 1/4 tsp black pepper

Preparation
Step 1
Cook noodles according to package directions, omitting salt and fat. Drain and set aside.
Heat canola oil in a large non-stick skillet over medium-high heat. Add onion, garlic, and mushrooms to pan; saute 5 minutes or until tender.
Add chicken (or tofu), carrots, peas, and beans; cook 3 minutes or until thoroughly heated. Stir in sesame seeds, soy sauce, sesame oil, pepper and noodles. Serve immediately.
