Ingredients

  • 1 (8-12 oz) package rice sticks/noddles
  • 1 tsp canola oil
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 1 (8 oz) package mushrooms, pre-sliced
  • 2 cups cooked chicken breast, cubed (or cubed tofu)
  • 1 cup carrot, matchstick-cut
  • 1 cup frozen peas
  • 1 (9 oz) package frozen green beans, french-cut
  • 1 T sesame seeds
  • 2 T soy sauce
  • 1 T sesame oil
  • 1/4 tsp black pepper

Preparation

Step 1

Cook noodles according to package directions, omitting salt and fat. Drain and set aside.

Heat canola oil in a large non-stick skillet over medium-high heat. Add onion, garlic, and mushrooms to pan; saute 5 minutes or until tender.

Add chicken (or tofu), carrots, peas, and beans; cook 3 minutes or until thoroughly heated. Stir in sesame seeds, soy sauce, sesame oil, pepper and noodles. Serve immediately.
