Pasta with Vodka Sauce

Ingredients

  • 1/2 lb uncooked penne pasta
  • 1 TB olive oil
  • 1/2 cup finely chopped onion
  • 1 tsp salt, divided
  • 1/4 tsp crushed red pepper
  • 1 garlic, minced
  • 1/2 cup vodka
  • 1/4 cup chicken broth
  • 1 can diced tomatoes
  • 1/4 cup whipping cream
  • 3 TB thinely sliced basil

Preparation

Step 1

1. Cook pasta omitting salt and oil; drain and keep warm.
2. Heat oil in a large skillet over medium-high heat; Add onion, saute until tender. Add 1/2 tsp salt, pepper and garlic,
3. Add vodka, bring to a boil. Reduce heat and simmer until liquid reduces by half.
4. Stir in 1/4 tsp salt, broth and tomatoes; bring to a boil. Reduce heat and simmer 8 minutes. Place in a blender until smooth.
5. Return to pan over medium heat, stir in whipping cream, stirring constantly.
6. Remove from heat, stir in pasta, basil and 1/4 tsp salt.
