Chocolate-Drizzled Pecan Lace Cookies

  • 1/4 c. butter
  • 1/4 c. packed brown sugar
  • 1/4 c. corn syrup
  • 2 Tb. heavy cream
  • 3/4 c. coarsely ground pecans
  • 2 Tb. all-purpose flour
  • 4 (1 oz.) semisweet chocolate baking squares, coarsely chopped
  • 2 Tb. shortening

Preparation

Step 1

Preheat oven to 375 degrees. Line baking sheets with parchment paper; set aside. In a small saucepan, melt butter over medium heat. Add brown sugar, corn syrup, and cream. Cook, stirring until mixture just begins to boil. Remove from heat and add pecans and flour, whisking to combine. Drop batter by teaspoonfuls, 2" apart, onto prepared baking sheets. Bake for 7 minutes. Let cool on baking sheets for 2 minutes. Transfer to wire racks to cool completely. In a microwavable bowl, combine chocolate and shortening. Microwave on HIGH until chocolate melts, approximately 5 minutes, stirring several times. Drizzle chocolate over cooled cookies. Let set before serving.
