Lemon Dill Vegetables

Ingredients

  • pine nuts 1/2 C
  • olive oil
  • broccoli 3 C
  • cremini mushrooms (fresh) 2 C
  • grape tomatoes - halved 1 pkg
  • dill 1 tsp
  • garlic 6 cloves
  • kosher salt 1 tsp
  • lemon juice 4 TB
  • chicken - if wanting to serve as main course

Preparation

Step 1

in large frying pan add pinenuts, oil & sliced mushrooms
cook until mushrooms are dark & tender
add broccoli cook until broccoli is crisp tender
add halved tomatoes, oil, garlic, salt, dill
serve hot

add cooked chicken chunks if wanting to serve as main course
