Ingredients
- Cream Cheese Pastry:
- 2 sticks (1 cup) unsalted butter, softened
- 1 (8 oz.) cream cheese, softened
- 1/4 .c. granulated sugar
- 2 c. all-purpose flour
- 1/3 c. fig preserves
- 1 1/2 c. sweetened shredded coconut
- 1/2 c. semisweet chocolate mini-chips
- 4 Tb. granulated sugar
- Decoration: white coarse (crystal) sugar
Preparation
Step 1
1. Crream Cheese Pastry: Beat butter and cream cheese in a large bowl with mixer on medium speed until well combined. On low speed, beat in sugar and flour until blended.
2. Divide dough in quarters. Shape each portion into a 1" thick disk. Wrap individually; refrigerate at least 4 hours until firm enough to roll out.
3. Heat oven to 350 degrees. Place oven rack in upper third of oven.
4. Melt preserves in microwave or saucepan over low heat (strain if chunky).
5. On floured surface, roll 1 disk into a 10" circle. Brush with a quarter of the preserves (it will barely cover dough). Sprinkle with 6 Tb. coconut, 2 Tb. chocolate chips and 1 Tb. sugar. Gently press so fillings adhere to dough. With a pizza wheel or knife, cut circle in 12 wedges. Roll up from wide edge to point. Place 2" apart on ungreased baking sheet(s); sprinkle wedges with coarse sugar.
6. Bake in upper third of oven 18-22 minutes or until golden brown. Remove to a wire rack to cool. Repeat with remaining dough and filling.
