Ingredients
- 3/4 c. butter , softened
- 2 c. sugar
- 3 large eggs
- 2 c. grated zucchini, (about 2 large)
- 1/2 c. milk
- 2 tsp. vanilla
- 2 1/2 c. flour
- 2 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ground cinnamon
- 1/2 c. cocoa
- 1 c. chopped pecans
Preparation
Step 1
Beat butter at medium speed with an electric mixer until creamy; gradually add sugar, beating well. Add eggs, one at a time, beating mixture after each addition. Combine zucchini, milk, and vanila. Combine flour and net 5 ingredients; add to butter mixture alternately with zucchini mixture, beginning and ending with flour mixture. Stir in pecans. Spoon batter into two greased 81/2x4/12x3" loaf pans. Bake at 350 degrees for 50 minutes or until a wooden pick inserted in center comes out clean. Cool in pans on wire racks 10 minutes; remove from pans, and cool completely on wire racks.
