  • 2 T. butter
  • 1 c. cubed peeled potatoes
  • 1 c. chopped sweet onion
  • 2 celery ribs chopped
  • 1/2 c. all purpose flour
  • 1/2 t. salt
  • 1/4 t. pepper
  • 2 T. chicken bouillon (or to taste)
  • 3 cans 14 1/2 oz. chicken broth
  • 2 c. shredded cooked chicken
  • 3 c. frozen mixed vegetables (peas, corn, carrots)



Step 1

In a large pot heat butter over medium-high heat. Add the potatoes, onion, celery: cook and stif for 5 - 7 minutes. Pour in a small amount of the chicken broth and stir in the flour, salt and pepper until blended. Gradually whisk in the rest of the broth. Bring to a boil, stirring often. Reduce heat; simmer, uncovered for 8 - 10 minutes or until potatoes are tender. Stir in remaining ingredients, heat through.
