Meatless Rice Skillet w. Almonds

Ingredients

  • 3 C prepared long grain rice
  • 15 oz can black or garbanzo or kidney beans, rinsed and drained
  • 14.5 oz can stewed tomatoes
  • 10 oz package frozen mixed vegetables
  • 1 C. water
  • 1/2 t. salt
  • 1/2 t. crushed dried thyme, or dillweed
  • 1 t. hot pepper sauce
  • 8 oz. can tomato sauce
  • 1/2 c. slivered almonds, toasted
  • 1/2 c. shredded mozzarella or cheddar

Preparation

Step 1

Prepare rice. Combine beans, stewed tomatoes, vegetables, water, salt and thyme in a large skillet. Stir in hot pepper sauce - bring to a boil, reduce heat. Cover and simmer 10-12 minutes. Add cooked rice and tomato sauce. Heat through 20 seprs (lost on the handwriting here), stir in toasted almonds. Sprinkle with cheese.
