  • garnish:
  • 1 lime, zest removed, and juiced
  • 10 ounce can coconut milk
  • 1 thinly sliced green chile pepper
  • 1 Tablespoon sugar
  • mahi mahi fillet cut into 8 pieces
  • 3 cups torn bok choy
  • cooked rice for serving
  • chopped cystallized ginger
  • lime zest
  • cilantro

Step 1

Zest then juice the lime. In a saucepan at medium heat : coconut milk, lime juice, green chile, and sugar. Rinse the fish pieces,pat dry, rub with salt, and place in saucepan with the milk mixture. Cover and simmer for 5 minutes. Add boy choy, and cook uncovered and cook for 3-5 minutes, or until the fish flakes with a fork. Pour over cooked rice,and top with ginger, lime zest, and cilantro.
