Grandma Metzger's Cream Cheese Cherry Delight

- Crust:
- 1 cup graham cracker crumbs
- 1/4 cup melted butter
- 1/3 cup white sugar
- Filling: 1 8-oz package cream cheese, room temperature
- 1 cup heavy whipping cream
- 1 cup powdered sugar Cherry pie filling

Directions: For the crust, mix together ingredients and press into either an 11x7'' pan or pie pan. Which pan you use depends on whether you want a thicker crust or thinner crust. We almost always use an 11x7'' pan.
Bake at 350°F for about 8 minutes. If you prefer, you can leave the crust unbaked and just chill in the refrigerator before filling. I like to bake mine.
Whip the whipping cream until it thickens and peaks form. Don't beat this so much it starts to turn to butter. I like it to have stiff peaks. In separate bowl, cream together cream cheese and sugar. Fold in whipping cream by hand. When incorporated fully, fold into prepared graham cracker crust. Spread across the crust evenly, then top with a can of cherry pie filling. Refrigerate overnight—this is really key—the longer you can refrigerate before serving, the better it is. Light, creamy, sweet, and delicious!
