Ingredients
- RELISH:
- 6 (4-oz.) chicken breast halves
- Salt and pepper, to taste
- Non-aerosol cooking spray
- 1 (20 oz.) can crushed pineapple in juice, partially drained
- 1/2 cup chopped red bell pepper
- 1 jalapeno pepper, seeded and finely chopped
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 cup chopped green onions
Preparation
Step 1
Preheat oven to 350 degrees. Season chicken with salt and pepper and place in a baking dish coated with cooking spray; bake for 25 to 30 minutes or until chicken is cooked through. Serve with pineapple relish and enjoy!
SERVING SUGGESTION: Brown rice and steamed green beans.
VEGETARIAN: Use non-breaded faux chicken patties.
KOSHER: No changes necessary.
GLUTEN FREE: Make sure pineapple is gluten free.
