Apricot Amaretto Preserves

Ingredients

  • 5 lb. apricots, pitted
  • 1 lemon, juiced
  • 1 (1.7 oz) box fruit pectin
  • 1 Tbsp. butter
  • 6 cups sugar
  • 3 oz. amaretto liqueur

Preparation

Step 1

Slice apricots into 1/2" pieces and cook in saucepan with 2 cups water until tender. Add lemon juice, pectin and butter, bring to a boil and remove from heat.

Add sugar and bring back to a boil for 1 minute, stirring constantly. Remove from heat and add amaretto.

Pour into hot jars, wipe rimes, and screw on lids.

Process in boiling water bath for at least 10 minutes.
