Ingredients
- 3/4 cup low sodium chicken broth
- 1/2 cup salsa
- 1/3 cup flour
- 1 cup chopped onion
- 2 1/2 pounds boneless skinless chicken breast halves
- 2/3 cup low fat sour cream
- 4 ounces shredded low fat Cheddar cheese
Preparation
Step 1
In a slow cooker, whisk together broth, salsa and flour. Stir in onion then arrange chicken on top. Cover and cook on LOW for 6 hours. Remove chicken breast halves to a plate. Ladle sauce from slow cooker into a blender and puree; stir in sour cream. Serve chicken with sauce and top with cheese.
LC SERVING SUGGESTION: Serve a big green salad on the side.
SERVING SUGGESTION: Add corn on the cob.
KOSHER: Use cultured soy OR soy yogurt instead of sour cream. Use your favorite soy cheese.
GLUTEN FREE: Make sure broth, salsa and sour cream are gluten free. Use cornstarch or another gluten free thickener.
