Black Pepper Salmon and Spinach

Ingredients
- 1 cup low sodium chicken broth
- Dash of white pepper
- 1/4 cup dry white wine (or use white grape juice with a splash of cider vinegar)
- 1 medium onion, peeled and thinly sliced
- 1 pound salmon fillets
- 2 tablespoons freshly cracked black pepper
- Non-aerosol cooking spray
- 1/2 tablespoon olive oil
- 4 cups fresh spinach washed, stemmed, and dried
Preparation
Step 1
In a baking dish, combine chicken broth, white pepper and wine (or juice/vinegar). Remove half of this mixture and reserve for later (to saute the spinach). Add onion and salmon to the baking dish with the remaining broth mixture; cover and refrigerate both the salmon and the reserved marinade for 30 minutes to 2 hours. Spread the cracked pepper on a plate. Remove salmon and onion from the marinade and press the cracked pepper into both sides of the salmon fillets. Heat the cooking spray in a large skillet over medium heat. Add the onion and cook until soft, about 5 minutes; remove with a slotted spoon. Raise skillet heat to medium-high and add olive oil; when almost smoking, place salmon in the skillet, flesh side down; cook until browned, 10 to 12 minutes; remove from skillet. Add spinach, onion and reserved marinade to the skillet and cook until spinach is just limp, about 3 minutes. Place spinach and onion mixture on dinner plates and top with salmon. Spoon some of the sauce over the salmon and serve.
LC SERVING SUGGESTION: Add Cauli-Rice (in a food processor or blender, process cauliflower until it resembles grains of rice; steam “rice” till tender; drain; salt and pepper to taste and fluff with a fork).
SERVING SUGGESTION: Instead of Cauli-Rice, serve brown rice topped with a dollop of low fat sour cream and chopped green onion.
