Sticky Apple Pudding - Microwave Mug

Ingredients

  • Butter, for greasing mug
  • 1 tbsp. melted butter, for bottom of pudding
  • 1 tbsp. brown sugar, for bottom of pudding
  • 1 tbsp. maple syrup
  • 1 tbsp. butter, room temperature
  • 2 tbsp. brown sugar, for pudding batter
  • 1 egg
  • Pinch cinnamon
  • Splash vanilla
  • 2 tbsp. milk
  • 4 tbsp. flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1/4 cup grated apple
  • Whipped cream, for serving
  • Maple syrup, for serving (optional)

Preparation

Step 1

Grease a large, microwavable mug with butter.

Add 1 tbsp. of each melted butter, brown sugar and maple syrup to bottom of mug.

Add 1 tbsp. butter and 2 tbsp. brown sugar to a small bowl and stir until well combined. Add egg and vanilla and stir until thoroughly combined. Stir in milk. Add flour, baking soda and baking powder. Stir to combine. Fold in grated apple. Scrape batter into prepared mug.

Microwave on high for 3 minutes. Let cool for 1 minute before removing from microwave oven. Carefully remove hot mug. Using a paring knife, loosen pudding from sides of mug. Invert on to plate.

Drizzle with maple syrup, if desired and serve with dollop of whipped cream.
