Tomato Shrimp Scampi with Fettuccine

Ingredients

  • 8 ounces fettuccine
  • 1/4 cup olive oil
  • 4 cloves minced garlic
  • 2 cups chopped plum tomatoes
  • 1/2 cup white cooking wine
  • 1/4 cup lemon juice
  • 1/2 tsp. sugar
  • 4 chopped scallions
  • 1 lb shrimp- peeled, devined, rinsed and patted dry
  • 1/8 tsp red pepper flakes
  • 4 tbsp. basil
  • 4 tbsp. parmesan cheese

Preparation

Step 1

Cook fettuccine for 8 minutes, drain and keep warm. Saute garlic in olive oil in large skillet over medium heat for 2 minutes. Add tomatoes and cook for 5 minutes. Pour in white cooking wine, lemon juice, sugar and simmer for 6 minutes. Add scallions, shrimp and red pepper flakes. Cook until shrimp turns pink and are cooked thru. Approximately 3 minutes. Stir in basil and parmesan cheese. Toss with cooked fettuccine and serve!!!
