Chicken Tortellini Soup

Ingredients

  • 8 c. chicken broth
  • 1 can (14 1/2 oz.) stewed diced tomatoes
  • 1 (10 oz.) pkg. frozen chopped spinach, thawed
  • 1/4 c. grated Parmesan
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 (9 oz.) pkg. cheese tortellini
  • 2 c. cooked cubed chicken

Preparation

Step 1

In a Dutch oven, combine the broth, tomatoes, spinach, Parmesan cheese, salt and pepper. Cook for 10 minutes; add the tortellini and chicken. Cook for 10 minutes or until the tortellini is heated through.
