Chicken Tacos with Pineapple Pico de Gallo

Ingredients

  • 1 c. chopped fresh pineapple
  • 1/2 c. chopped peeled mango
  • 2 Tb. minced cilantro
  • 1 Tb. finely chopped red onion
  • 1 Tb. lime juice
  • 3/4 tsp. salt, divided
  • 2 c. cubed, cooked chicken
  • 1/2 tsp. ground cumin
  • 1/4 tsp. salt-free garlic seasoning blend
  • 8 corn tortillas, warmed

Preparation

Step 1

For Pico: combine the pineapple, mango, cilantro, onion, lime juice and 1/4 tsp. salt in a small bowl; set aside. In a large nonstick skillet with nonstick cooking spray, stir the chicken, cumin, seasoning blend and remaining slat until heated through. Serve on tortillas with pineapple pico de gallo.
