Ingredients
- 2 c. cooked chicken, cubed
- 2/3 c. mayonnaise
- 1/3 c. celery, diced
- 1/4 c. raisins
- 1/4 c. sweetened, dried cranberries
- 1/4 c. slivered almonds
- 1 Tb. fresh parsley, minced
- 1 Tb. lemon juice
- 1 tsp. mustard
- 1/8 tsp. pepper
- 6 lettuce leaves
- 6 croissants, split in half horizontally
Preparation
Step 1
Combine the first 10 ingredients in a large bowl; mix well. Cover and refrigerate for 2-3 hours. Place a lettuce leaf on the bottom half of each croissant; top with about 1/2 cup chicken mixture. Add the top of croissant.
