Sesame Beef & Asparagus Stir-Fry

Red-pepper flakes and fresh ginger add pizzazz to a medley of beef, scallions, and asparagus. Broccoli would work well in place of the asparagus.

Ingredients

  • 1/4 cup reduced-sodium soy sauce
  • 3 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon grated fresh ginger
  • 2 teaspoons dark sesame oil
  • 2 teaspoons cornstarch
  • 1/4 teaspoon red-pepper flakes
  • 6 ounces spaghetti or chinese style noodles
  • 2 teaspoons beef flavored bouillon
  • 4 green onions, sliced
  • 1 teaspoon dark sesame oil
  • 1 tablespoon dark sesame oil
  • 1 pound boneless sirloin, thinly sliced
  • 3 cloves garlic, minced
  • 1 tablespoon dark sesame oil
  • 1 pound asparagus, diagonally cut in 1-1/2 inch pieces
  • 1 tablespoon toasted sesame seeds

Preparation

Step 1

Sauce:
1. In cup, mix the first eight ingredients. Set aside.

Noodles:
2. Cook noodles according to package directions.

3. Drain the noodles and return them to the pot. Add the bouillon, green onions, and the one teaspoon sesame oil. Cover to keep warm.

Stir-fry:
4. In large skillet, heat 1 tablespoon oil. Add the beef sirloin and garlic. Stir-fry for 3 minutes. Remove beef from skillet.

5. Add 1 more tablespoon oil and heat it. Add the asparagus pieces and stir fry for 2 minutes.

6. Stir the soy sauce mixture and then add it and the beef to the skillet with the asparagus. Stir-fry one minute until thickened.

7. Serve the stir-fry over the noodles and top each serving with sesame seeds.
