Chicken Enchiladas

Ingredients

  • Mix the following ingredients. It is better if you can let the mixture sit overnight.
  • 2 (6 oz.) cans chicken
  • 1 can cheddar cheese soup
  • 1 can cream of chicken soup
  • 1 medium onion, chopped
  • 1 small can chopped green chilies
  • chili powder to taste
  • salt and pepper to taste
  • 16 corn tortillas
  • Toppings: Sour cream, Monterey Jack, cheese, black olives

Preparation

Step 1

Fry tortillas. Spoon mixture in tortillas and roll up....place in baking dish. Cover with sour cream, Monterey Jack cheese, and chopped black olives. Heat.
