Steak: Round Swiss

Ingredients

  • 1 pound eye round steak: sliced 1/4 inches thick
  • 1 whole sliced onion
  • 1 whole sliced red pepper
  • 1 whole sliced green pepper
  • 1 whole sliced fennel
  • 1 1/2 cups chicken broth
  • chicken/tomato bouillion powder
  • 3 whole cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon dried oregano
  • 1 small can stewed tomatoes
  • flour for dredging
  • kosher salt
  • pepper
  • 3 tablespoons olive oil

Preparation

Step 1

In a large skillet heat up the olive oil until very hot without smoking.

Add salt and pepper to flour and the dredge the meat on both sides.
Saute the meat on both sides until golden brown.

Add everything to the pan and stir slightly. Bring to a boil, then cover and simmer on the stove top until the meat is fork tender, about 45 minutes to an hour.
