Ingredients
- 1/4 cup fresh lemon juice (2 lemons)
- 1/4 cup tomato juice
- 2 tea. cumin
- 1 galic clove, minced
- 1/2 cup coarsely chopped fresh cilantro
- 1/2 tea. salt
- 1/2 tea. pepper
- 3/4 cup olive oil
Preparation
Step 1
In a medium bowl, whisk together the lemon juice, tomato juice, cumin, garlic and cilantro. Then whisk in the salt and pepper, and, if necessary, adjust the seasoning. Gradually whisk in the olive oil until incorporated.
The dressing can be made 1 to 2 days ahead and refrigerated.
