Shrimp Cocktail by Seth - Mexican style

Seth Miller's shrimp cocktail. I make this up on the weekend and eat it for lunch/dinner throughout the next week.

Ingredients

  • 1 pound cooked shrimp - tails off
  • 1/2 cup finely diced red onion
  • 1/2 cup finely chopped cilantro
  • Juice of 2 lemons
  • Juice of 2 limes
  • 1 cucumber, chopped
  • 1 tomato, chopped
  • 1/2 tsp. salt - if needed
  • 1-2 tsp. Tapitio sauce (if you want)
  • 1/3 small can spicy hot V-8
  • 2-3 cups Clamato juice (I play this by ear to make it as soupy as I personally like)

Preparation

Step 1

Chop all items, including shrimp into bite size pieces, add V-8 and clamato juice. Refrigerate and enjoy!
