Ingredients
- 4 roasted red peppers, peeled and seeded
- 3 tablespoons olive oil
- 1 tablespoon red vinegar
- 3 gloves garlic, mashed (or 1/2 tsp minced dried garlic)
- 1/2 tsp kosher salt (a bit less if you use regular salt)
- 1/2 can white (cannelini) beans
Preparation
Step 1
Puree peppers in a blender or food processor (if a blender, keep the lid onset off). With the motor running, add the oil, then the vinegar, garlic, and salt. Add the beans and blend until smooth. Adjust seasonings to taste. Serve immediately or refrigerate overnight.
