Garlicky Roasted Potatoes with Herbs

Ingredients
- 2 tblsp. chopped garlic
- 2 tblsp. olive oil, divided
- 1 1/2 lbs. quarted Yukon gold or red potatoes.
- 4 about 4 c.
- Cooking spray
- 1/2 tsp. sea salt
- 1/4 tsp. pepper
- 1/4 c. chopped fresh flat leaf parsley
- 1/2 tsp. grated lemon rind

Preparation
Step 1
1. Combine garlic & 1 tblsp. oil in a small saucepan over medium heat.
2. Cook 2 minutes or until golden, stirring often.
3. Remove garlic & set aside.
4. Drizzle remaining oil over potatoes in a large bowl, tossing well to coat.
5. Arrange potatoes in a single layer on a baking sheet coated with cooking spray & sprinkle with salt & pepper.
6. Bake at 475 for 30 minutes until potatoes are golden.
7. Combine reserved garlic, parsley & lemon rind in a small bowl.
8. Sprinkle garlic mixture over potatoes.
