  • 6 cups reduced sodium chicken broth
  • 3 Yukon gold potatoes, peeled and cut into 2 inch pieces
  • four cloves garlic, peeled
  • 1 pound baby spinach
  • 1 cup half-and-half

Step 1

Combine the broth, potatoes, and garlic in a large saucepan over high heat. Bring to a boil and cook for 10 min., until the potatoes are fork tender. Purée with an immersion blender or regular blender. Stir in spinach and half-and-half and simmer for 5 min. Season to taste with salt and freshly ground black pepper before serving.
