Rhubarb Crisp

Ingredients

  • Filling:
  • 4 c rhubarb (fresh or frozen) sliced into 1" pieces
  • 1 c sugar
  • 2 T cornstarch
  • 1 c water
  • 1 stp vanilla extract
  • Topping:
  • 1 c flour
  • 3/4 c oatmeal
  • 1 c brown sugar
  • 1 stick butter, softened

Preparation

Step 1

1. Mix filling ingredients in a sauce pan and bring to a boil; stirring until thickened.

2. Mix topping indigents together with a fork or hands. Add half of the mixture to a pie dish. Pat to form a crust.

3. Add filling and sprinkle with remaining topping.

4. Bake at 350 for 30 minutes or until top of pie begins to brown.
