Hollandaise Sauce

Ingredients

  • 3 egg yolks
  • 2 TBL lemon juice
  • 1 stick (1/2 C) butter
  • 1/2 tsp. salt
  • 1 pinch pepper

Preparation

Step 1


place egg yolks, lemon juice & seasonings in blender.
set aside

dot butter into pieces & heat to foaming hot in saucepan
blend egg yolk mix for 3 seconds
continue to blend while adding hot butter in stream of droplets.

serve immediately.

in NOT used immediately, set blender jar in pot of tepid water to keep sauce consistency
