Hollandaise Sauce

Ingredients

  • 1/2 C unsalted butter
  • 2 lg egg yolks
  • 2 TBL cold water
  • 1 TBL fresh lemon juice
  • 1/8 tsp salt

Preparation

Step 1

place butter in sm. saucepan over med-low heat
cook 5 min. or until completely melted
carefully skim solids off top w/ spoon
discard solids
slowly pour remaining butter out of pan, leaving remaining solids in pan
discard solids

combine egg yolks & t TBL water in sm. saucepan, stirring w/ whisk
until foamy
place pan over med heat, stirring constantly until mixture thickens
slightly
gradually add 1/4 C clarifed butter, abt. 1 TBL at a time, stirring w/ whisk until each additional is incorporated & mixture is thick
Reserve remaining clarified butter for another use

stir juice & salt into butter mixture, whisking until blended
