Pork Chops with Sautéed Apples

Ingredients
- 1 tablespoon olive oil
- 1/2 cup sliced yellow onion
- 2 McIntosh apples, peeled, cored and diced
- 1 teaspoon dried thyme
- four boneless pork loin chops
- 1/2 cup reduced sodium chicken broth

Step 1
Heat oil in a large skillet over medium-high heat. Add onion and apples and cook for 3 to 5 min., until golden brown and soft. At the thyme and cook for 1 min., until fragrant. Remove the mixture from the pan.
Season both sides of pork chops with salt and ground pepper add the chops to the same pan over medium-high heat. Cook for 1 to 2 min. per side until golden brown. Add the broth and bring to a simmer. Cook for 3 min., until the pork is tender. Transfer to a serving platter and top with onion and apple mixture.
