Broccoli Cheese Soup

Ingredients

  • 1 1/2 cups chopped broccoli
  • 3 Tbsp. butter
  • 1/2 onion, minced
  • 1/4 cup flour
  • 1 (16 oz) carton half-and-half
  • 2 cups chicken broth
  • 1/8 tea. cayenne pepper
  • 1/4 cup minced carrot
  • 1 (16 oz) pkg. mild Mexican Velveeta cheese, cubed

Preparation

Step 1

Microawve broccoli in covered bowl with several tablespoons water on HIGH for 5 minutes or until tender; rotate several times.

Melt butter in a large saucepan and cook onion until it is translucent., Add flour, stir and gradually add half-and-half, chicken broth, 1/2 tea. salt and 1/4 tea., pepper, cayenne pepper and minced carrots and stir constantly.

Heat until mixture thickens. (Do Not Boil). Add cheese and stir constantly until cheese melts. Add cooked broccoli and serve hot.
