- 1 tablespoon olive oil
- 1/2 cup chopped white onion
- 8 ounces boneless, skinless chicken breast, cubed
- 4 cups reduced sodium chicken broth
- 1 (15 ounce )can creamed corn
- 1 cup low-fat milk

Step 1
Heat oil in a large saucepan over medium heat. Add onion and cook for 3 min., until tender. Add the chicken and cook for 3 to 5 min., until the chicken is golden brown on all sides, stirring frequently. Add broth and creamed corn and bring to a simmer. Simmer for 10 min. Decrease the heat to low and stir in the milk. Simmer for 5 min. Season to taste with salt and freshly ground black pepper before serving.
