Ingredients
- 8 ounces good semisweet chocolate chips
- 1/2 cup heavy cream
- 1/2 teaspoon instant coffee granules

Step 1
Cook the chocolate chips, heavy cream, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. Spread on desired cake or frosting.
This ganache is glossy, thinner with a deep chocolate flavor. Good for frosting tops of items but too runny for traditional icing tasks, piping or filling.
To make thicker for fillings and frosting/piping, take the finished mixture and put it under an electric mixer. Beat until thicker but spreadable and a milk chocolate color. This will carry the same flavor and setting characteristics but hold better for piping and traditional icing tasks.
