Ingredients
- 8 slices Italian or French bread
- 1 tablespoon olive oil
- 1/4 cup grated Parmesan cheese
- 2 (28 – ounce) cans puréed tomatoes
- 2 bay leaves
- 2 teaspoons dried oregano

Step 1
Preheat the broiler.
Brush both sides of the bread with olive oil and toast under the broiler until golden brown on both sides. Top one side of the tolls with the Parmesan cheese and return the toasted broiler. Broil for 1 to 2 min., until the cheese is golden.
Meanwhile, in a large saucepan, combine the tomatoes, bay leaves and oregano. Set the pan over medium-high heat and bring to a simmer. Decrease the heat to medium and simmer for 10 min. Remove the bay leaves and purée with an immersion blender or regular blender. Ladle the soup into bowls and top with the bread.
