Ingredients
- 1 12oz can chunk white tuna in
- spring water
- 2 tsp sweet curry powder
- 1 TBL olive oil
- 1/4 C inced red onion (1/2 sm onion)
- 1/2 C mayo
- 1 TBL rice vinegar (or 1 tsp white
- vinegar & 2 tsp water)
- 1 tsp prepared Dijon-style mustard
- 1/4 C chopped pecans
- 1/4 tsp salt
- 1 dash cayenne pepper
Preparation
Step 1
: drain tuna & set aside
in sm saucepan, over low heat, saute curry powder in olive for 5 min, stirring every so often
while curry powder is cooking, mince the onion chop the crystallized ginger into sm. pieces, abt. size of minced onion
in med sized bowl, whisk to combine mayo, rice vinegar & dijon mustard
add cooked curry powder mix. (make sure to scrape it all in), , crystallized
ginger, onion, chopped pecans, salt & dash of cayenne pepper
whisk
add tuna, mix w/ fork until tuna is well blended & coated w/ dressing
